Galauki Kebabs- Vegan alternative for Galauti Kebabs (Zaika-e-Awadh)

Galauti Kebabs have been on every foodie’s drooling list. Who has not heard of the tender, ‘melt in the mouthIMG-20160520-WA0018delicacy from Lucknow? Kebabs are strictly non-vegetarians repast and its various assortments can only delight a non-vegetarians’ taste buds. Most vegans only enviously imagine the delicate flavors and come to accept the fact that this delicious treat is not for them to savor.
Now imagine the kebabs, as delicious and richly flavored as Galautis but, made up of Lauki! (Bottle Gourd) Don’t believe it? Try the vegetarian alternative of Galauti that’s not only delicious but can be made in a jiffy too.
You need a medium sized Lauki, about 2 bowls of Chana Dal, 5-6 cloves of Garlic, one piece of Ginger, 3-4 Green chilies and freshly ground homemade Garam masala. Mix everything together with salt and give it about 5 whistles in a pressure cooker. Once cool, mix it in a grinder. Add chopped onions and coriander. To give it the authentic Mughlai flavor, add a dash of Kevada. Make kebab shaped flat balls and shallow fry them on a Tawa. Serve them hot with onion rings and green chutney. It can be a star dish for your cocktails and dinners. Your non- vegetarian guests will be in a delusion that they have been served with some authentic kebabs and vegetarian guests will rave about its exotic taste and flavors. And not to forget…Baba Ramdev will approve too!
